This was the day I picked them up - they have coloured up more now and the male has grown a much more pronounced dorsal fin - will put some new pics up soon

Thanks for the pics. Nice looking fish! While I haven't found any real specific material, I am making an apothesis that whatever pattern area you see when you purchase a fish, that is generally what you will end up with. Not sure about how much more color, or new color areas show up over time. The website doesn't seem to have much activity, but maybe some experts will expand on the coloration over time.

I am not familiar with the pellets you mentioned. Are those just in the UK? I am in the USA.

They are probably New Life Spectrum pellets, and NLS products are sold in the US.
