what to put in a 10 gallon thank?

Hello,

I've got a 10 gallon tank and was wondering what kind of apisto's i could put in it?
is apistogramma bitaeniata an option, or is it to small for this species

If it is properly structured, you can put just about any pair of apisto in a 10g tank (including bitaeniata). Not to say that there might be aggression issues, but there are ways around that.

What species do you have available to you locally?

sp opal, macmasteri, agassizii,borelli,nijssenii,hongsloi,piauiensis and cacatuoides and perhaps bitaeniata

sp opal, honsloi, borelli, and piauiensis are the smallest and most mellow, but all of them (save maybe the nijsenni) should be not too much trouble. I think that you should choose in regards to your likes. If it were me (and they were a nice form), I would probably choose the hongsloi. They can be pretty spectacular.
