I guess all actually are not only carnivore, but do eat some vegetables as well, but are they all predominantely carnivores?

Or is any species herbivore?

There's been very little 'gut studies' carried out on wild apistos. Where studies have been undertaken, the results show that they are micro-predators - mostly aquatic crustaceans and insects/larvae - plus some plant detritus for vegetable matter. A. angayuara is a zooplankton feeder.
