I've got this anubias that has been in a 10 ga for a couple of years now, and it's starting to get out of control. I moved it from the 10ga to the 55ga, so it's not like it's running out of room, but I thought I'd ask about propagating anubias. Can you just cut the central... uh... thingy (rhizome?) in two and have both halfs grow? Is there anything special to do to make things go well? Does anyone have direct experience with this?

Yes, you can cut it in 2.

I always look for area on the plant where the roots are thinner then the rest. Then cut from the plant to the roots. Making a downward cut on it. works great and is les stresful on the plant allowing for a quicker recovery of it and less slowing of growth.
