We currently have a 55g with a few different species of apistos in it..

Recently we've seen some eunotus eggs, and cockatoo eggs..

We are getting rid of the fish in our 10g and we plan to put a pair in that tank.

Is 10g big enough for a pair? We will probably remove the male from the tank once the eggs are laid/fertilized.

Does this sound like a good idea?

Thank you!

Assuming it is a standard 10g tank(20l x 10w x 12h) then a pair will usually be fine in there. Provide lots of cover and hiding places.

If you want to be safe pull the male as soon as you have eggs.

A 10 gallon tank should be fine for most Apisto. species. It also depends on the aggressive nature of the particular species trying to be spawned. In my opinion wild caught fish also need more space perhaps a 20 gallon. Evan is correct provide foliage and cover in case something goes wrong.
