My experience breeding this is rather limited. I got a group of four unsexed young wild rams. I had them in a 15 gal tank forever and all they did was hide. I rarely ever saw them.

I gave up and tossed them in the 125 community tank and they paired up and now are out and about all the time and breeding and raising fry to free swimming. Go figure. The water in this tank is softened but the ph is about 7. I'd say get a group of 4 or 5 and let them figure it out.

As for the peat I don't know which is best there. I have a water softener so have not used that.
