I have reproduced abacaxis in pH around 6 (if the measurment was even valid at all - tried my best though). So no worries there. The breeder I got them from had them in ec 280 us/cm and pH around 7 water, since he wanted to prepare them for the "real world" in potential less soft-water-homes...
TBH the picture looks really nice.
For breeding tanks though you might run into problems with the vallisneria. Never got it (or any other val) to grow in super soft water. I tried that last in my sp. abacaxis showtank but did not succeed. There is fine grain sand and a layer of leaves above it...
Hmm, that's hard to say. I'm not actively trying to enhance their colors, but I guess it's happening anyway. The pencilfish that show red coloration (six Nannostomus sp. "Cenepa") have definitely colored up since I got them. Whether that's because of the diet or the very soft water conditions...

I was cutting a little bit short on the botanicals, because the wood is tinting the water so much, that i really are at the point of too dark water. But maybe this is just subjective :)

Parameters:
EC: between 25 and 40 us/cm, depending on what day after wc you are measuring.
pH - drop test: around 6
No3 - I get different readings, but it is usally low. Between nothing and 1 ppm
KH - Not detectable with drop test (switches color with the first drop)
GH - I have...
