68-72 in the winter, and 76-82 in the summer seems perfect for borellii....not sure how the cardinals will feel about the winter time low temps though. Heck, with AZ weather, you could almost keep them outdoors
Many female cichlids will eat their spawns in the presence of what they deem to be a threat. Better for them to recycle the nutrients than risk someone else getting the meal. If the goal is to reproduce them, probably best to remove potential predators....

Your water is most likely perfectly fine as is. Without digging for old books, cacatuoides is found in nature, in water with a pH close to or above 8 often.
