if you are having both rams and apistos, i would add way more plants and decor to try and break up the tank into different territorys. having it open like that may well cause territory disputes

sounds to me like your trickle filter is doing an extremely efficient job of stripping CO2 out of the water, and that your CO2 reactor just cant keep up. From the pH / KH / CO2 tables, I'd say you only have around 3ppm of CO2 at best. with an alkalinity of 40ppm (2-3dKH) you'd ideally want the...
a target level suggested by many is 20ppm
There are a few sources of potassium available for the aquarium. Personally I use potassium sulphate (K2SO4) powder, but KNO3 or KCl will also work fine. KNO3 will obviously add nitrates as well though.

elocharis parvula is an attractive carpeting plant. It will grow slowly in low light, but it will grow.

It was just from my LFS. nowt special about it. In the past ive used kids play pit sand too, which has a slightly lighter colour, but still looks very natural. Its a bit finer than the stuff Ive used herethough, so tends to get blown about by over enthusiastic ancistrus, and then gets everywhere.
They videoed the talk on rheophilic CA cihclids at the last auction (I remember walking in front of the camera on my way out). I have no idea I'd get hold of a copy though, even if they did.

I had breeding A. borelli with amano shrimp for ages. They only time the apistos would bother the shrimp was when they strayed near to the spawning site / any fry
nuts. It clashes with both the last day of the UK discus show, and a 10K run I am supposed to be competing in.
