If conditions are right, say a tank with a huge group of apistos, they will become more competitive and aggressive towards food, coming up top to feed. There is also some degree of learning that goes on with feeding, so over time they could become more effecient at surface feeding over time...
A. steindachneri are not very difficult to please. Mine spawn in a pH of 8 in very hard water. They have great color, and although large they are not too agressive. I have never had to separate my pair and they share a 10g.
Personally I would avoid the sharks and gouramis at all cost. These fish get big, and can be aggressive. I dont think plecos would eat the apistos, they could eat the eggs if they can get to em, but typically your fry wont survive anyway in a community tank.
I wouldnt be too alarmed. Females in submissive coloration can be somewhat brown, it all really depends on their surroundings. Substrate color, water params, lighting, habitat complexity are a few things that can alter the appearance of a fish.

In aquaculture, there have been several publications that have found an association with increased dietary vitamin C and decreased deformities. As I understand Vitamin C is required to form collagen which is the precursor to bone.
I am having success with A. caucatoides and A. steindachneri in ID. So far I am just selling locally and have yet to try shipping. This forum has several sponsors(check the sponsor's forums) that you could get a pair of some apistogramma shipped to you for under $50, which is'nt bad.
